I decided to stuff these gems with baby spinach and Perfect Italiano&#8217;s Mozzarella and Parmesan Grated Cheese for that awesome stretchy texture and yummy cheesy taste. I added green chili padi to it for extra oomph &#8211; they&#8217;re not really spicy. If I could find Jalapenos, I would use them! To make these, all you need to do is: saut&#233; baby spinach till wilted then combine with sour cream, garlic powder, dill, salt, Perfect Italiano Mozzarella and Parmesan Grated Cheese, then spread the mixture on chicken breast. Roll up and dip in egg, flour and breadcrumbs. Fry till golden. Savour! These were done in 30 minutes from start to finish. I&#8217;m a fan of simple, no-frills recipe which calls for minimal ingredients. It&#8217;s a bonus that Perfect Italiano&#8217;s cheeses pack so much punch that very little seasoning is needed to flavour your dish. Crispy Cheesy Chicken Roll-ups with Perfect Italiano (budgetpantry.com) What you need: 4 large chicken breasts 200g baby spinach 150g Perfect Italiano Mozzarella Grated Cheese 50g Perfect Italiano Parmesan Grated Cheese 200ml sour cream 1 clove garlic, chopped 3 chilli padi, chopped Half teaspoon salt Sprinkle of dill Sprinkle of black pepper Oil for frying To coat: 2 eggs, whisked Self-raising flour Japanese panko Steps: Heat up half a tablespoon of olive oil and add the garlic. Saut&#233; the spinach till wilted. When cooled, squeeze out excess water with kitchen paper and set aside. Combine the sour cream, Perfect Italiano Mozzarella Grated Cheese and Perfect Italiano Parmesan Grated Cheese. Add a sprinkle of dill and half teaspoon salt. Mix well, and combine with the earlier spinach. I added chopped green chilli but you can skip it if you don&#8217;t take heat. Flatten each piece of chicken breast with a food mallet or the back of your knife. Season with black pepper and salt. Spread the cheese mixture on the surface and roll up, tucking in the edges as you go along. Dip in flour, then egg, and finally in panko. Repeat until all chicken breasts are rolled up. In a frying pan, heat up about a centimeter of oil, enough to shallow fry the chicken breasts. When oil is hot, place each chicken breast carefully into the pan and fry, untouched, for 3 minutes each side, till crust is golden. Be sure not to miss the sides. Serve hot with your preferred sides.</p>

					<description><![CDATA[<p>Advertorial Pizza is the main food group of my two pesky little brothers. They can eat it any time of the day! They say that pizza is a well-balanced diet with carbs (pizza base), veggies (tomato sauce and vegetable toppings), protein (chicken meat, bacon or ham), calcium (cheese) and lots of vitamins. Ok, I can&#8217;t disagree with that! At home, I often come up with easy meals to feed the whole family. Jason is a big fan of pizza, especially no-frills ones like Pizza Margherita or Three Cheese Pizzas. He loves the simplicity of fresh tomato base with tasty cheese, and I agree with him that good quality cheese topping is really essential in bringing out the fresh flavours of a simple pizza. For this recipe, I chose Perfect Italiano&#8217;s Pizza Plus, a superior blend of three delicious types of cheeses: Mozzarella, Parmesan and Cheddar. Mozzarella gives us the super-stretchy texture we&#8217;re all familiar with while Parmesan and Cheddar add delightful flavour to our homemade pizza. I used pumpkin and zucchini as the main toppings as their subtle sweetness and slight crunch doesn&#8217;t overwhelm and is a perfect accompaniment to the flavourful cheese. I added a bit of bacon for that extra flavour, but this recipe is great already without it, super if you wish to sneak some vegetables into your kids&#8217; diet! And if you know me, I am someone who invariably opts for quick and nutritious meals at home, which is why I decided to go with ready-made wheat pita bread as the pizza base. I like the pocket in the middle as compared to a full-on dough base as it puffs up slightly in the oven for a more delightful texture. If you can&#8217;t get freshly baked pita from a nearby bakery, you can get them at the supermarket, along where you&#8217;d find bread and wraps. Do what works for you and your family and please don&#8217;t feel obliged to make everything from scratch. Cooking should be a stress-reliever, not a stressful affair! <p>Pizza is the main food group of my two pesky little brothers. They can eat it any time of the day! They say that pizza is a well-balanced diet with carbs (pizza base), veggies (tomato sauce and vegetable toppings), protein (chicken meat, bacon or ham), calcium (cheese) and lots of vitamins. Ok, I can&#8217;t disagree with that!</p>

<p>At home, I often come up with easy meals to feed the whole family. Jason is a big fan of pizza, especially no-frills ones like Pizza Margherita or Three Cheese Pizzas. He loves the simplicity of fresh tomato base with tasty cheese, and I agree with him that good quality cheese topping is really essential in bringing out the fresh flavours of a simple pizza. </p>

<p>For this recipe, I chose Perfect Italiano&#8217;s Pizza Plus, a superior blend of three delicious types of cheeses: Mozzarella, Parmesan and Cheddar. Mozzarella gives us the super-stretchy texture we&#8217;re all familiar with while Parmesan and Cheddar add delightful flavour to our homemade pizza. </p>

<p>I used pumpkin and zucchini as the main toppings as their subtle sweetness and slight crunch doesn&#8217;t overwhelm and is a perfect accompaniment to the flavourful cheese. I added a bit of bacon for that extra flavour, but this recipe is great already without it, super if you wish to sneak some vegetables into your kids&#8217; diet! </p>

<p>And if you know me, I am someone who invariably opts for quick and nutritious meals at home, which is why I decided to go with ready-made wheat pita bread as the pizza base. I like the pocket in the middle as compared to a full-on dough base as it puffs up slightly in the oven for a more delightful texture. If you can&#8217;t get freshly baked pita from a nearby bakery, you can get them at the supermarket, along where you&#8217;d find bread and wraps. Do what works for you and your family and please don&#8217;t feel obliged to make everything from scratch. Cooking should be a stress-reliever, not a stressful affair! </p>

Simple and effortless to use, they transform your everyday meals into gourmet creations perfect for the festive table! Today, I have a recipe for Tuna, Spinach &#38; Potato Frittata, which uses both Mozzarella and Parmesan cheese. Perfect Italiano Mozzarella Cheese has a mild flavour, melts to perfection and has a traditional stretch, perfect for topping my frittata with. Perfect Italiano Parmesan Cheese is matured up to 18 months &#8211; which explains its bold, sharp and savoury taste. I like to use it in egg dishes to complement the light flavour. My version is a little easy on the palate, without cream and gravy, but if you prefer a heavier taste, you can add half a bottle of creamy alfredo sauce just before topping it with cheese. Tuna, Spinach &#38; Potato Frittata (budgetpantry.com) Makes: One 10&#8243; x 7&#8243; x 2&#8243; oval dish What you need: 150g Perfect Italiano Mozzarella cheese 50g Perfect Italiano Parmesan cheese 4 eggs 4 potatoes, peeled and sliced thinly 100g baby spinach 1 can tuna in olive oil Half a yellow onion, sliced thinly Black pepper Half teaspoon salt 200ml Alfredo sauce or any creamy white pasta sauce (optional) Steps: Preheat oven to 180C. Combine eggs with Perfect Italiano Parmesan Cheese and beat lightly. Coat your baking dish with some cooking spray and layer it with half the potatoes. Toss the baby spinach, tuna, sliced onions, black pepper and salt in a large bowl. Layer on top of the potatoes, then pour in the egg and cheese mixture. Layer with the remaining sliced potatoes. Follow with creamy white pasta sauce (if using). Top generously with Perfect Italiano Mozzarella Cheese and bake for 25 minutes till cheese is golden brown and egg has set.</p>

1 can tuna in olive oil<br />
Half a yellow onion, sliced thinly<br />
Black pepper<br />
Half teaspoon salt<br />

<p>Coat your baking dish with some cooking spray and layer it with half the potatoes.</p>

<p>Toss the baby spinach, tuna, sliced onions, black pepper and salt in a large bowl. Layer on top of the potatoes, then pour in the egg and cheese mixture.</p>

<p>Layer with the remaining sliced potatoes. Follow with creamy white pasta sauce (if using). Top generously with Perfect Italiano Mozzarella Cheese and bake for 25 minutes till cheese is golden brown and egg has set.</p>
