Tears start streaming even before we insert the swab stick! The whole family can be doing it with her and I&#8217;ve honestly memorised ALL the &#8216;tips to performing an ART on your kid&#8217; already and nothing works. I really don&#8217;t geddit. I decided to think of better things by thinking what to cook for dinner. Step one was to picture what I already have in the fridge/freezer/cupboard/storeroom so I don&#8217;t have to spend money to order more ingredients while I havent used what I have. And so I remembered I have a pack of no-nitrates no chemicals/preservatives bacon from Jill&#8217;s Sausages in my freezer. But since I was going to blog, I couldn&#8217;t possibly cook bacon and pasta and call it a day. So since everyone&#8217;s not feeling too good, a bowl of comforting bacon potato corn chowder sounds really nice, I think! And here&#8217;s how to make it &#8211; no flour needed! Best part? It cooks in one pot for incredibly easy washing up. Check out my other soup recipes. Homemade Bacon Potato Corn Chowder Soup &#8211; no flour! (budgetpantry.com) Makes 1-2 servings What you need: 800g potatoes (about 4 medium sized, cubed) 2 large yellow onions, chopped 8-10 tbsps corn kernals (I used frozen) 12 slices no-nitrates bacon, sliced into 1-cm pieces 1 can evaporated milk (320-330ml doesn&#8217;t matter) 1 litre water 3 tbsps concentrated chicken stock (I used Woh Hup) 1 tbsp garlic powder (or use 3 cloves minced garlic) 1 tsp salt 4-5 sprigs spring onions, divide white and green parts and slice thinly Black pepper Steps: In a large pot on medium heat, cook bacon for 6-8 mins until crisped. No need to add any oil. Once crispy remove bacon pieces and leave the grease in the pot. Add chopped onions and white part of spring onion. Fry for 5 mins until translucent. Add minced garlic (if using this. If using garlic powder, see next step). Cook for 2-3 minutes. Add the corn, potatoes, garlic powder, salt, water and concentrated chicken stock. Bring to boil and lower heat. Simmer until potatoes are fork tender (but not super mushy), about 20 minutes. Turn off the flame. Using a hand-held blender, blend soup until your preferred consistency. I like to leave a few pieces of potato chunks for some bite. Add the evaporated milk, bacon and green part of spring onions and stir through. Finish with a dash of black pepper if you like. Serve with warm crusty bread! &#8212;&#8212;&#8212;- Tip: Can you do this without a hand held blender? Yes, if you can transfer the soup to a stand blender, it works too. Can you do this without ANY type of blender? Well yes, but you need to cook the potatoes till they&#8217;re mashed and even so, the consistently won&#8217;t be as creamy because you&#8217;ll get small onion and corn pieces. Not a problem if you don&#8217;t mind it though. Let me know how it goes!</p>

She&#8217;s not a fan of potatoes when it&#8217;s all mushy but she does love these airfried potato balls. It&#8217;s like begadil without the spices because I&#8217;m a bit too lazy to add this and that. This recipe only needs 5 ingredients: potato, carrot, broccoli, egg and panko breadcrumbs. You can jazz this up with a cheese surprise in the centre! When shaping, just stuff some shredded cheese in the middle and watch your kid&#8217;s eyes open big big when they bite into one! The egg is used as a dip before coating the balls in breadcrumbs. There will be leftover egg, so what I do is add some milk to the egg and make a fluffy egg omelette roll for cbb. Protein? Checked. Fibre? Checked. Carbs? Checked. Happy kid? CHECKED! And yes you can toast and blitz your own breadcrumbs. If you don&#8217;t have an airfryer, you could pan fry this or bake them in the oven. 					<description><![CDATA[<p>Before we know it, we&#8217;re in the final month of the year! It&#8217;s crazy how fast the year has gone by. This year, I&#8217;m thankful for the chance to explore different recipes for cbb, and I feel really lucky that she welcomes my creations with her open arms mouth! I&#8217;ve always believed that coming up with new recipes for kids aren&#8217;t really difficult &#8211; I mean, what can they eat right? Lai lai qu qu also those few things. The core ingredients are the same fish, meat, veg, rice.. it&#8217;s just the presentation and textures that are different. I could easily use these ingredients to cook a chicken, broccoli and potato soup and serve them with rice&#8230; cbb loves her soups but it&#8217;s also nice to create something different for her. So instead of chunky potatoes I decided to blend them into a creamy mash, then add some quinoa cos she loves to chew, and of course we can&#8217;t leave out the protein (chicken) and vegetables (broccoli and cherry tomatoes). I love cooking this dish in my CorningWare&#174; casserole. Did you know that CorningWare&#174; can go straight from the freezer to stovetop or oven? Yes, you don&#8217;t need to worry of the glass shattering due to a sudden change in temperature. Made of a revolutionary glass ceramic material called Pyroceram&#174;, CorningWare&#174; was developed by scientists to protect the nose cone of the space shuttle from incredible and extreme temperature changes. It comes with a 10-year warranty for the base vessel and 2-year for the lids against thermal breakage too. CorningWare&#174; has always been a large part of my childhood memory; my 82-year-old aunt is an ardent fan &#8211; her CorningWare&#174; still cooks well for the past 50 years. CorningWare&#174; proudly celebrates her 60th anniversary in 2018. I served this dish in our Corelle&#174; dinnerware, which is made through a unique patented hub lamination process that thermally bonds three layers of glass; core glass in the middle with top and bottom layers of very clear &#8216;skin&#8217; glass. The lamination results in glass dinnerware that far exceeds the normal strength possible for any single glass composition. I love it that it&#8217;s super durable and non-porous, resistant to permanent staining, breaking and chipping &#8211;&#160;Corelle&#174; is backed by a one-year warranty against chipping, crazing, and cracking. Will be adding more soon :) Kid-friendly chicken quinoa casserole with mashed potatoes (budgetpantry.com) Serves 3 adults and 1 baby What you need: 5 russet potatoes, peeled and cut into chunks 2 boneless chicken thigh or breast, each about palm sized 2 handfuls of cooked broccoli florets, either blanched or steamed 1 cup cooked quinoa (cook half cup raw quinoa according to package instructions) 100g shredded cheddar cheese Seasonings for mashed potatoes 25g butter 1 tablespoon mayonnaise 1 tablespoon sour cream 1 tablespoon snipped spring onions Half tablespoon salt (can omit for kids) Marinade for chicken 1 tablespoon sesame oil 2 tablespoons low sodium soy sauce Half tablespoon sugar (can omit for kids) Steps: Make the mashed potatoes: In a large oven-proof casserole, cook peeled potatoes in boiling water till tender, about 20 minutes. If you can push a fork through the potato, it&#8217;s done. Drain the water and return casserole to stove for about a minute to cook off the excess water. Mash in the same pot with a hand-held blender till creamy and smooth (or simply use a fork, whisk or masher), then add all seasonings for the mashed potatoes (above). Cook the chicken: Marinate chicken with sesame oil, low sodium soy sauce and sugar for half an hour. Air fry for 12 minutes at 180C, or pan fry till done. Allow to cool and cut into bite-size pieces. Assemble and bake: In the casserole with mashed potatoes, top with cooked quinoa, broccoli and chicken pieces. Add shredded cheese and bake for 15 minutes at 200C till cheese melts. TIP: You can substitute chicken with other meats, or use meat balls! If cooking quinoa in a rice cooker (I use half cup raw quinoa to 1.5 cups water), add in the broccoli in the last five minutes to cook together. 		<title>Cheesy bacon potato gratin</title>

					<description><![CDATA[<p>I can&#8217;t believe that I still have time to blog about a cheesy potato gratin recipe but this is long overdue! Gratin is a traditionally French dish that has ingredients in a shallow baking dish topped with a browned crust &#8211; it could be using cheese, breadcrumbs, eggs or butter. So potato gratin means the key ingredient is potato, topped with something that would brown it. Of course it has to be melted cheese! This is the husband&#8217;s modified recipe. So if he can do it, so can anyone! He cooked this dish for our anniversary and it was the most delicious potato gratin I have ever tasted. The white sauce is made with flour, butter and milk. Some gratins I&#8217;ve had before include packaged cooking cream, and I&#8217;m not necessarily a fan of those. This also means the dish is a little more waistline and pocket-friendly. The sauce that goes all over the potatoes: Bacon is optional. Spring onions are optional. You can buy those pre-shredded packs of red &#38; white cheddar/mozzarella cheese from Cold Storage for $2.99 a pack. Depending on the size of your baking dish (I used a 10&#8243; x 7&#8243; oval pyrex baking dish), you may have leftover sauce. I used them the next day in a seafood white sauce pasta which Jason gave the thumbs up to. We had it with the awesomest juciest brined pork chops. Recipe coming up for the chops too! I love potatoes. If only they weren&#8217;t carbs! Cheesy Bacon Potato Gratin Cake (budgetpantry.com) Serves 5-6 (I used a 10&#8243; x 7&#8243; oval pyrex baking dish)What you need: 5 russet potatoes, wash and peeled 1 medium yellow onion, sliced length-wise 150g shredded cheddar 150g mozzarella cheese 200g bacon, sliced 3 tablespoons plain flour 4 tablespoons salted butter 450ml fresh milk (not low fat) Salt and coarse black pepper to taste Handful of chopped spring onions Steps: Preheat oven to 190C. Slice peeled potatoes to about 1/4 inch thickness. Coat very lightly with salt and coarse black pepper. Grease the bottom of your baking dish with butter and layer half the potato slices at the bottom. Follow with sliced onions and bacon, then again with potatoes. Now make the sauce: Melt the butter in a pan, then add in flour (no need to sift) and a sprinkle of salt. Mix till mixture becomes thick, then whisk in the fresh milk while stirring constantly. Add in the shredded cheddar cheese until it melts completely. Pour this sauce over the potatoes, then top with shredded mozzarella cheese and spring onions (optional). *If you have leftover sauce, use it the next day over pasta! Cover with aluminium foil and bake for 1 hour 20 minutes till bubbling. Remove foil and continue baking for 10 minutes until browned.</p>

Serves 5-6 (I used a 10&#8243; x 7&#8243; oval pyrex baking dish)<span style="color: #e8aec1;">What you need:</span></p>
<p>5 russet potatoes, wash and peeled<br />
1 medium yellow onion, sliced length-wise<br />
150g shredded cheddar<br />
150g mozzarella cheese<br />
200g bacon, sliced<br />
3 tablespoons plain flour<br />
4 tablespoons salted butter<br />
450ml fresh milk (not low fat)<br />
Salt and coarse black pepper to taste<br />
Handful of chopped spring onions</p>
<p><span style="color: #e8aec1;">Steps:</span></p>
<p>Preheat oven to 190C.</p>
<p>Slice peeled potatoes to about 1/4 inch thickness. Coat very lightly with salt and coarse black pepper.</p>
<p>Grease the bottom of your baking dish with butter and layer half the potato slices at the bottom.</p>
<p>Follow with sliced onions and bacon, then again with potatoes.</p>
<p>Now make the sauce: Melt the butter in a pan, then add in flour (no need to sift) and a sprinkle of salt. Mix till mixture becomes thick, then whisk in the fresh milk while stirring constantly. Add in the shredded cheddar cheese until it melts completely.</p>
<p>Pour this sauce over the potatoes, then top with shredded mozzarella cheese and spring onions (optional). *If you have leftover sauce, use it the next day over pasta!</p>
<p>Cover with aluminium foil and bake for 1 hour 20 minutes till bubbling. Remove foil and continue baking for 10 minutes until browned.</p>

Today, I have a recipe for Tuna, Spinach &#38; Potato Frittata, which uses both Mozzarella and Parmesan cheese. Perfect Italiano Mozzarella Cheese has a mild flavour, melts to perfection and has a traditional stretch, perfect for topping my frittata with. Perfect Italiano Parmesan Cheese is matured up to 18 months &#8211; which explains its bold, sharp and savoury taste. I like to use it in egg dishes to complement the light flavour. It works wonderfully every time. This recipe is adapted from Perfect Italiano&#8216;s website, which is full of easy-to-follow recipes to inspire you this festive season. My version is a little easy on the palate, without cream and gravy, but if you prefer a heavier taste, you can add half a bottle of creamy alfredo sauce just before topping it with cheese. Combine eggs with Perfect Italiano Parmesan Cheese and beat lightly. Coat your baking dish with some cooking spray and layer it with half the potatoes. Toss the baby spinach, tuna, sliced onions, black pepper and salt in a large bowl. Layer on top of the potatoes, then pour in the egg and cheese mixture. Layer with the remaining sliced potatoes. Follow with creamy white pasta sauce (if using). Top generously with Perfect Italiano Mozzarella Cheese and bake for 25 minutes till cheese is golden brown and egg has set.</p>
