Another bread maker recipe? Ok being the noob that I am, I never thought that I could bake a cake in the bread maker. So when I read that it was possible to in the Panasonic SD-P104, I did the ONE thing that I do best and nobody can fight- ACT ON IMPULSE: Bake a cake! My mum makes the best butter cake. When we were kids, she used to bake the amazing butter cake once a month. And every month, my brother and I would fight over the cake tin AFTER the cake was unmolded. And what were we after? The thin layer of cake stuck to the cake tin. We would run our tiny fingers along the sides of the tin to unravel the baked bits.. and after a substantial amount was “collected” on our messy fingers, we would pop them into our little mouths for one of the best childhood kitchen memory ever.. one which we still remember 30 years on. Show you what awesomeness looks like: I’m not making Mum’s butter cake today, and I promise to finally ask her for the recipe, watch her in action and replicate it, so that everyone can eat a delicious butter cake. We don’t stay together (and haven’t been since I was 8), so it’ll take some time, but I’m on it. Today, I’m going to show you how to bake a cake with the Panasonic bread maker. All of you seasoned bakers might be scoffing just about now. “She runs a cooking blog and she doesn’t even know that bread makers can bake cake?!” What? I have a blog doesn’t mean I know everything in the world about cooking, about kitchen appliances and magic ingredients. I am not a purist nor must I insist on pounding spices myself, which I don’t. I am always on the lookout for short cuts. I am always learning. I am in a no way a cooking expert (please go to Lily’s blog if you want to learn from a great cook who I really admire). I might not be all of the above, but I am good at putting food on the table on a budget, in a few simple steps. So you decide la, if you want to stick around. Excellent choice. Yesterday I tried improvising on the basic cake recipe that came in the bread maker’s instruction manual. I had some white chocolate in the fridge and I swear, my intention was purely to bake a white chocolate cake. But then knowing me, how to be just satisfied with one ingredient? I saw some kraft singles in the chiller compartment and stole them from 88 to add to the recipe. Wait tomorrow she look for the cheese how? Easy, I’ll just tell her to eat cake or polo bread with butter. The instruction manual had a disclaimer: “The finished cake is similar to butter cake. (But not totally the same as the sponge cake available in the market.)” Very good, setting expectations! The description is totally apt. The finished cake (and yes has been almost finished) had the texture of a rustic, nostalgic butter cake. I decided to drizzle just a bit of light vanilla glaze on top before serving. There! Just about perfect! Ok now let’s bake cake! You could also bake this in a cake tin at 170C for 50-55 minutes. Bread Maker Cheese and White Chocolate Cake Makes: 6 slices Total cost per cake: about $3.90 What I used: For the cake: 180g cake flour 2.5 teaspoons baking powder (about 7.5g) 110g unsalted butter, cubed 60g sugar (you need to up it to 100g if you’re not making the glaze) 2 tablespoons milk (about 30ml) 100g eggs (2 medium eggs), beaten 40g white chocolate chips/ drops 3 slices cheese singles, cut into strips Decor hearts (optional) For the glaze: 30g icing sugar (about 1/4 cup) 3 tablespoons milk A drop of pure vanilla extract Steps: 1. Sift flour and baking powder together. 2. Add in sequence to the bread pan: Butter, sugar, milk, eggs, flour + baking powder from Step 1. 3. Close the lid and select menu “12”. Press “Crust” to choose how brown you want your cake to look. I left it as “Medium”. Press “Start”. 4. After about 12 minutes, the bread maker will beep. Open the lid and DO NOT PRESS “Stop”. This is when you clean up the flying flour with a rubber spatula and do a quick mix back into the mixture. 5. Add the white chocolate and cheese. 6. Close the lid and press “Start”. 7. After about an hour, your cake will be ready! Allow to cool for 5 minutes before tipping it out from the bread pan. 8. Make the glaze: Mix the icing sugar, milk and vanilla extract in a bowl and stir til incorporated. Add more milk if you prefer the glaze to be thinner. 9. Decorate your cake if you’re so inclined and enjoy! How much I spent: $1.85 for butter $0.55 for cake flour $0.60 for eggs $0.90 for cheese singles Everything else from my pantry (ok almost everything can be found in yours I think!)

And I’m back to business! I was going to blog about my Taiwan trip first but got reminded by someone that “你正经的事不做，blog 什么 travel?” Oh! So now blogging about recipes and food is “正经的事”. Ok! The first thing I wanted to do when I got back from Taiwan was explore the Panasonic bread maker. It can make basic bread, bread rolls (that are to be finished in the oven), cake, dumpling skin and even chocolate! Apart from this polo bread loaf, I also made a Cheese and White Chocolate Cake in the afternoon. I declare today “Bread Maker Day”! Before I left for Taiwan, I spied my aunt checking the breadmaker out on a few occasions. You see, she loves bread and all kinds of buns imaginable. Her favourite shops? Four Leaves, Bread Talk, Provence and Crystal Jade Bakery. My aunt has a gastric problem and always needs to eat bread. And at 75, a breadmaker is new to her as it is to me. Today afternoon’s project is my second go at using a BM, to very happy results I must say! Ok, let’s get on with it! Pineapple Polo Bread Loaf Makes: 6 slices Total cost per loaf: about $2 What I used: For the cookie topping: 50g salted butter (unsalted is fine) 40g sugar Half a beaten egg 100g plain flour 3g baking powder (about a teaspoon) 1-2 drops vanilla extract Another 2 teaspoons sugar for sprinkling For the loaf: 150g bread flour 20g salted butter 25g sugar 70ml milk 100ml cold water 5g instant dry yeast 50g raisins (optional) Steps: 1. Prepare the loaf: In the bread pan, add all ingredients for loaf except the raisin and yeast. 2. Place the instant dry yeast and the raisins into their respective compartments. 3. Using the up/ down arrows, select Menu “8”. Indicate that you want to add raisins by selecting “Yes”. Press the “Start” button and let the machine do its job. Leave it alone until it beeps, about 40 minutes later. 4. Prepare the cookie topping: In a mixing bowl, cream butter til soft and creamy. Add sugar in 2-3 additions and mix well til the mixture becomes whitish and smooth. 5. Add the egg mixture in 2-3 additions (reserve 1 teaspoon egg mixture for brushing later), followed by the vanilla extract. Mix well. 6. Sift plain flour and baking powder together and add to the mixture above until smooth. Form into a round dough and wrap with plastic wrap. Refrigerate for at least 20 minutes. 7. With 3 minutes to go (the breadmaker will indicate time left), remove the cookie dough from the fridge and roll out to a flat cookie sheet. Keep the plastic wrap on for easy rolling. Coat one side with the reserved egg liquid. 8. When the machine beeps, open the lid (no need to press “Stop”) and place the cookie dough on the bread dough with the egg-coated side facing down. Slightly press the sides of the dough. Sprinkle sugar on top. 9. Close the lid and press “Start” again. 10. The bread will be ready in another 1 hour +. Allow to cool for 5 minutes before removing from bread pan. How much I spent: $1.20 for butter $0.65 for bread and plain flour $0.30 for half packet instant dry yeast Everything else from my pantry (ok almost everything can be found in yours I think!) The bread turned out very soft, the raisins evenly distributed, the cookie topping crunchy, buttery and delicious. This attempt turned out so much better than my first attempt. I am looking forward to getting to know the breadmaker better. Look out for my Cheese & White Chocolate Cake recipe coming up! And very soon, I’m gonna teach the aunt how to bake her own bread. How thrilled will she be? Very!

Amateur post! I was given the chance to review Panasonic’s latest SD-P104 Breadmaker yesterday, and being extremely excited to try out a breadmaker for the first time, I set off to bake basic white bread almost immediately. I followed the instructions almost to a T (I suck at reading instruction manuals)– and some combination of ingredients, a push of a few buttons plus four hours later, I have a crusty soft loaf of bread just in time for the world cup finals. It even looks like a football! The recipe called for only 250g flour. I thought it strange but followed it anyway. Maybe it meant for me to bake a mini loaf? Ok so how does this work? I have never handled one of these in my life, and I have to say it is pretty easy to use. I fumbled a bit when setting the timer- it kinda confused me- but most timers on all kitchen appliances confuse me. But once I got it going, I was ready to bake bread! This is the bread pan with blade attached: I used 250g bread flour, 10g unsalted butter, 2 tablespoons sugar, 1 teaspoon salt, 1 tablespoon milkpowder, 190ml water + 1 teaspoon yeast. What you do is basically empty all ingredients except the yeast into the pan: There’s a separate yeast dispenser for this model- apparently the dough rises better because yeast is only added at an appropriate time instead of all together with the rest of the ingredients: Select Menu option 1 (I simply followed the step-by-step in the recipe book. Menu 1 is for basic bread), indicate if you want to add raisins or not, and let the machine know your preference for “Light” or “Medium” crust. And then you press “Start”: AND DON’T TOUCH IT ANYMORE UNTIL IT BEEPS FOR YOU! The modes will change during the process, i.e., when you first press start, it will show “Knead”, followed by “Rest”, then “Rise”, then “Knead” and “Rise” again.. then finally “BAKE”. And when it beeps, it’s done! Super soft when lightly pressed, but bounces back immediately: I used super basic ingredients and a non-fancy method.. just dump and go. Imagine if I become the super-bread-maker-woman who uses all the chim methods 还得了? But I would probably double the flour next time. There are lots of different methods and recipes in the recipe book- you can even make cake, pizza dough and chocolate in this. Jason immediately whipped up a ham and cheese bread the way mum used to make it. I have a beaming husband. Goodnight!
