But too bad for him, in my kitchen, he doesn&#8217;t really have a choice. Eat it or eat instant noodles, or starve. Actually, before I present him with a &#8216;strange&#8217; creation &#8211; which most of the time is really normal in other people&#8217;s kitchen &#8211; I already know if it is something he can accept. Like I wouldn&#8217;t expect him to eat and like avocado cookies sans butter (I used avocado in place of butter as the main fat), but this avocado egg mayo? TOTALLY LEGIT. He&#8217;ll love it. The trick is to serve him something familiar in another form, or with one or two &#8216;strange&#8217; ingredients added for him to try out.. then go full fledged. I made triangle sandwiches, and served them with a side salad, some fruits, two nitrate-free bacon slices and a begadil (hehe). I made this again today but without the frills. The ingredients are really simple. Just avocado, eggs, mayo, spring onions, yellow onions, sugar and optional salt. I like to eat it reallyyy cold, on its own or simply wrapped in lettuce. Because avocado is already creamy, you don&#8217;t need as much mayo as you would without it. I don&#8217;t recommend using Japanese mayo with this. Japanese mayo uses egg yolks instead of whole eggs, and has a too-strong vinegar flavour to me PLUS it has MSG. My favourite mayo brand is actually Best Foods Real Mayonnaise but I read recently that they&#8217;ve changed their recipe. Seriously, the only reason I&#8217;m using Heinz now? It&#8217;s a squeezable bottle. I buy my ketchup, mayo and mustard only if they&#8217;re in a squeezable bottle packaging. What is your favourite mayo? I might be shopping around for a new brand! If you&#8217;re out of breakfast or brunch ideas, here, use this one! It also makes an awesome picnic food! Avocado Egg Mayo (budgetpantry.com) Serves: 2 Total cost per serving: $1.05 What you need: 1 avocado 3 hard boiled eggs 1 tablespoon finely chopped yellow onion 1 tablespoon spring onions, snipped into little circles (I always find it easier to snip than chop) 1.5 tablespoons mayonnaise 1 teaspoon sugar A pinch of salt (optional) Steps: Carve out the avocado flesh and mash with egg til fine. Add mayonnaise and sugar. Do a taste test. You might need a pinch of salt depending on how salty your mayo is. Lastly, add onions and spring onions and mix to combine. Serve as sandwich filling or with breakfast crackers. How much I spent: $1.20 for avocado $0.90 for eggs Everything else from my pantry</p>

The fact is also that my fridge finally went &#8216;kapowwww&#8217; yesterday and we have to quickly clear everything before they go bad. Luckily it decided to die on Saturday and not Sunday when I&#8217;d have been done with my marketing for the week! But ok la, it die also good (&#23427;&#27515;&#20102;&#20063;&#22909;), that means we can finally get a newww fridge! We went out to get one with a bottom freezer so that it is easier for Ah-mm and 88 to get things, i.e., no need to bend to reach the vegetable compartment all the way at the bottom. I&#8217;m quite looking forward to our new fridge. it&#8217;s gonna be delivered on Tuesday! So thinking of the ingredients I have in the fridge, which is now actually a cupboard.. I have bacon, eggs, the orange capsicum that I was soooo fascinated with on Friday that I had to bring two home, a yellow capsicum (this one just &#23458;&#20018; cos it looked bright and fresh next to its orange cousin), and some spring onions. Oh, I also stole 2 slices of bread from 88. I decided to make something pretty with these! Bacon and egg cups baked in a muffin tray! You can also airfry these, but you only only AF 2-3 at a go and in those aluminum cups. I wanted to save time and money so I used my muffin tray. I realised that although these came out nice from the oven, it was lacking.. a sizzle. So what do I do? Like any Airfryer fan, I scooped each one out when done and airfried them for another 3-5 minutes so that the bacon got even further crisped up. If you like your eggs more runny, you can decrease the oven baking time. These were really easy to make. You could also use blanched spinach or sliced mushrooms in place of capsicums, and add shredded cheese before cracking the egg! Step by step recipe with pictures right below! Bacon and Egg Muffin Cups (budgetpantry.com) Makes: 6 Total cost per &#8216;muffin&#8217;: $0.86 What you need: 6 slices bacon 6 eggs 2 slices bread 3 tablespoons diced capsicums (any colour) Spring onions, chopped/cut with scissors A squeeze of low-fat mayo (optional) Some olive oil spray/olive oil Steps: Preheat oven to 190C. Oil your muffin tray with olive oil. Cut out 6 little bread circles that will fit the base of your muffin tray. I used a water bottle opening to cut. Wrap/line a slice of bacon around the sides of the muffin holes, then place the bread circles at the base. Top with chopped capsicums, spring onions and a squeeze of low fat mayo. Crack an egg in each, bake for 15 minutes til eggs are done to your liking. I used top rack. Scoop out from tray using a spoon, arrange on plate, garnish with some more spring onions and serve. *Optional: If you have an airfryer and want extra crisp, after scooping out, place on the AF grill pan and AF at 180C for another 3-5 minutes til sizzling. **If using the AF entirely, you&#8217;ll need to get those individual aluminium cups. Preheat for 3 mins at 180C, then AF for 12-15 minutes til eggs are done, depending on how runny you like your yolks. Follow all the layering steps above. <p>Crack an egg in each, bake for 15 minutes til eggs are done to your liking. I used top rack. Scoop out from tray using a spoon, arrange on plate, garnish with some more spring onions and serve. </p>

<p>*Optional: If you have an airfryer and want extra crisp, after scooping out, place on the AF grill pan and AF at 180C for another 3-5 minutes til sizzling.</p>
<p>**If using the AF entirely, you&#8217;ll need to get those individual aluminium cups. Preheat for 3 mins at 180C, then AF for 12-15 minutes til eggs are done, depending on how runny you like your yolks. Follow all the layering steps above. Scoop out or serve direct from the aluminium cups!</p>

The secret to a good cheese omelette, for me, has gotta be the addition of milk and choosing to use cheddar. I made this cheese omelette just slightly firmer, and crispier around the edges, but sometimes I like it still a bit wet and gooey in the middle. When you eat a mouthful, the barely-set creamy textures from the cheese, milk and egg combine so beautifully together, you can&#8217;t believe you&#8217;re spending only under a dollar a portion. If you&#8217;re using bacon, ham, or sausages, cook the meats (and tomatoes!) first before cooking the omelette, for more flavour!(butter and bacon-fat.. mmmmmm) Makes 1 serving What I used: 2 medium eggs 2 tablespoons milk 1 stalk spring onions, chopped 1 slice chedder cheese, cut into small pieces A knob of butter Salt and pepper to taste 1 tomato, sliced 1. Crack 2 eggs in a large bowl, add a pinch of salt + pepper and beat with a fork.&#160;Add milk and beat quickly til frothy. I didn&#8217;t use a whisk but if you want to, go ahead! 2. Add in the spring onions and cheese. Melt the butter in a pan under medium heat and pour in the omelette mix when hot. 3. Let it set until not much liquid is around the edges, then fold omelette in half. Use the empty space to grill some tomatoes. 4. Slide the omelette onto a plate after 30 seconds and continue grilling the tomatoes both sides. Serve with ham, bacon, sausages, baked beans, muffins, toast, and everything else you like! How much I spent:&#160; $0.50 for eggs $0.40 for cheese Everything else from my pantry!
