As long as your baking pan is 8×8 it doesn’t matter. About the “aluminium” and “baking sheet”, do you mean to ask if you could substitute the aluminium foil with baking paper? I recommend foil because I’ve heard about baking paper sticking strongly to brownies. For good quality cocoa powder, google Valrhona.
